These thoughtful methods reduce the need for chemical intervention and promote healthy, resilient crops. By growing our own ingredients, we reduce transportation emissions, minimize waste, and ensure every dish begins with the freshest local flavour.
Our Bee Apiary 🐝🍯
Our on-site bee apiary is home to hardworking bees that play a vital role in pollinating our crops and supporting local biodiversity. The honey harvested from our hives is not only delicious — it’s a symbol of our commitment to regenerative agriculture and the delicate balance of nature. By fostering a healthy bee population, we’re helping protect an essential species while sweetening our dishes with a truly local touch. Our honey that we harvest can be found in our dishes on the menu and is also available to purchase at the restaurant.

Even the tables you dine at tell a sustainability story. Crafted from 113,000 recycled chopsticks, each table is a powerful symbol of reuse and innovation. These beautiful, durable surfaces serve as a daily reminder that sustainability can (and should) be part of every element in the hospitality experience.

Cory Linkson
Executive Chef
Executive Chef Cory Linkson brings over 20 years of culinary expertise to AG Inspired Cuisine. A graduate and certified chef, he sharpened his skills in prestigious kitchens across Canada and the U.S., including Emerald Lake Lodge, Chateau Montebello, and the White Barn Inn in Maine. These experiences shaped his passion for seasonal, regional cuisine and artisanal sourcing. After returning to Niagara, Chef Cory helped pioneer Wine Country Cuisine during his decade at Hillebrand Estates and Peller Estates. Grounded in classical French technique and guided by a deep respect for local ingredients, his cooking lets the best of each season shine.

Macy Lacasse
Farmer
Farmer Macy studied Horticulture at Niagara College, where she gained hands-on experience in growing practices that prioritize the environment, soil health, and flavour. Her time there not only strengthened her knowledge of sustainable techniques but also sparked a deeper mission: to help people reconnect with the food they eat. Now part of the AG family, Macy is excited to bring her energy and experience to the farm, working closely with our chefs to grow ingredients that inspire creativity in the kitchen. Her goal is to cultivate a space that supports innovation, encourages sustainability, and produces food that genuinely tastes as good as it looks.
