Featured Red – Colaneri “Ripasso” Blend 2015

Sommelier Notes: A Cabernet Franc, Syrah blend made in traditional “Ripasso” style. It’s repassed over 100% dried skins from Cabernet Sauvignon and Merlot. On the nose expect cherry, raspberry and a touch of smokiness. The palate enjoys the essence of plum, cherry, vanilla and spice. Although a versatile “all courses” type of wine, we’ve chosen this medium bodied “summer type” pairing with Chef Cory Linkson’s signature , “Tenderloin of Beef”. We match the wines tannic, vibrant acidity to the savory melted brie cheese and the foie gras jus within the dish.
